Ibiza-inspired tapas & cocktail bar to replace Rookwood

A new tapas and cocktail bar inspired by the Balearic island of Ibiza is set to open in the Ropewalks district.

La Finca Eivissa will be spread across three floors in the former Rookwood Bar & ‘Cue on Back Colquitt Street.

The new venue has been described as a “place to chill in the evening and party into the early hours” with live entertainment every night.

The food menu will be based around ‘fusion taps’ and small plates which will be served throughout the night alongside a drinks offering focused on mainly Spanish brews including a extensive range of Spanish draught and bottled beers.

A ‘build it yourself’ Sangria menu will also be on offer as well as a “huge range” of local and Spanish gins in the basement cocktail bar La Finca Bodega.

New operator Stephen Thompson, who is close friends with the owner of the former Rookwood Bar and Bar Bodega, says: “The ideas for La Finca Eivissa have been ever growing – looking into the styles of food, drinks and service you can find in Ibiza and the Balearics.

“Ibiza has some of the best restaurants bars and nightclubs in the world so we plan to bring a piece of that magic to our home city of Liverpool.”

Your Move previously reported that a new operator was being lined-up for the Ropewalks venue.
