Rudy’s Pizza to open new restaurant at Royal Albert Dock this December

Rudy’s Pizza Napoletana is set to open its third Liverpool pizzeria in the city’s Royal Albert Dock this December.

Rudy’s Albert Dock, which will be located at the former site of The Leather Satchel Company, will join the other city centre locations Bold Street and Castle Street.

The neighbourhood pizzeria has been serving Neapolitan pizza since 2015 from its original Rudy’s in Ancoats, Manchester; and is now extending its Liverpool sites as it aims to serve up fresh pizza daily to the people of Liverpool.

Rudy’s follows the authentic Neapolitan tradition of pizza making, serving classic recipes such as Marinara, Margherita and Calabrese – all originating from Naples, the birthplace of pizza.

Rudy’s dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours, alongside ingredients imported from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius, and Fior di Latte mozzarella.

All in accordance to an authentic Neapolitan technique, the dough is cooked in a Stefano Ferrara oven for just 60 seconds – resulting in a soft and light pizza with an airy and raised cornicione (the edge or rim of the pizza).

Emma Kidd, general manager of Rudy’s Albert Dock, says: “We look forward to opening our third site in Liverpool. The team have loved serving our Neapolitan pizza in the city, and we hope this new site will be a welcoming addition to the heart of the city centre.”

Rudy’s is on the lookout for their kind of people and is now recruiting pizzaioli and front-of-house team members. Find out more about how to apply here.
