A new vegan restaurant located in a unique listed building in Liverpool’s commercial district is nearing its opening.

Veggie Republic is on a mission to show vegetarians and meat eaters that “anything can be veganised and taste amazing”.

The eatery, which is aiming to launch in September, is replacing former floor shop Morris Jones & Son at 16 Cook Street.

Peter Ellis, the famous architect and engineer behind Oriel Chambers on Water Street, designed the Grade II-listed building.

The new restaurant will serve a 100% vegan menu boasting meat-free substitutes for burgers, pizza and pasta, as well as raw vegan options.

Chris from Veggie Republic tells YM Liverpool: “We aim to give vegans, veggies and meat eaters a good selection of freshly cooked food to choose from rather than limited options on a regular menu.

“We are 100% vegan right down to our cleaning products which are all cruelty free!”

Veggie Republic will be based across two levels at 16 Cook Street, with the lower ground floor housing the restaurant and the basement reserved for private functions and large groups.

Meanwhile at nearby Derby Square, Rocket and Ruby is preparing to replace Cheese & Co which announced its closure in March.

The self-styled ‘neighbourhood café’ plans to open in October, serving breakfast, lunch and diner.
