Parliament Square Coffee to launch new flagship site in Liverpool’s business district

Parliament Square Coffee has opened a new flagship site on Cook Street in Liverpool, marking the next step in the brand’s expansion within the city.

The 3,500 sq ft venue, located just behind The Ivy, is set to welcome customers from Friday 27 March.

The new site, the brand’s largest to date, brings together its speciality coffee offering, supplied by national partner Ozone Coffee, with a British-inspired brunch menu focused on seasonal and locally sourced ingredients

The venue also introduces an in-house bakery, led by baker Jess Garland, formerly of Bakesale, who joins as Head Baker. This marks the first time Parliament Square Coffee has brought its baked goods production fully in-house.

Garland will oversee a daily selection of cakes, pastries and seasonal sandwiches, available at the Cook Street site as well as across the brand’s other Liverpool locations.

The venue includes a dedicated takeaway coffee bar, aimed at serving customers in the surrounding business district looking for coffee and food to go. Alongside the existing brunch menu, the team, led by head of operations Jon Baldwin, will also introduce a selection of British-style sandwiches, served from midday.

A drinks menu will include British wines supplied by local merchant R&H, as well as Camden Lager, reflecting a continued focus on British producers.

The new flagship will also include a serviced meeting room for up to 12 people, intended for corporate meetings and private bookings. Reservations for the space are expected to open in April.

As with the brand’s other locations, the Cook Street site will operate on a walk-in only basis, maintaining an informal and accessible setting.

Opening hours for the new site are 7am-7pm Monday to Friday, and 8am-7pm on Saturdays and Sundays.

Parliament Square Coffee first launched on Parliament Street in June 2023 and has since developed a steady following across the North West. In 2024, it opened a second site on Clarence Street, which also houses the Parliament Square Academy, an educational space for those interested in barista training.
