The team behind the original Everyman bistro is gearing up to launch a new Hope Street venture called The Pen Factory.

Based in the Annexe next to the Everyman Theatre, which reopened earlier this year with a new-look Everyman bistro in the basement, the new restaurant will be different a different entity to the original bistro, which ran between 1970 and 2011.

The team is currently searching for staff in preparation for the restaurant’s opening and an advert says: “With 120 covers, the big open space of the old Pen Factory will be Liverpool city centre’s newest restaurant and bar. With its Snug, wood burning stove and ‘ingle nook’ seating, Pen Factory can operate like a traditional pub, serving specialist beers and wines not often available by the glass. Teas, coffees and snacks are served from breakfast time onwards.”

The restaurant area will feature a seasonal tapas style menu, larger meals and traditional bar snacks. However, there will be a nod to the old bistro with a return for the ‘salads that changed the world’ and daily baked quiche. Unlike the former bistro, it will offer table service and there will be a courtyard for drinks and food to be enjoyed outside.

A company, Pen Factory Ltd, has been set up featuring former Everyman bistro team, including joint-founders Patrick Byrne and David Scott. The Pen Factory will not be associated with the current Everyman bistro, which has former 3345 Parr Street owner Tom Lang as food and drink director.
