Team behind Maray to open new concept at Duke Street Food & Drink Market

Duke Street Food and Drink Market will welcome a new kitchen when it reopens on Monday 17 May.

Sabich – a new casual food concept created by the team behind Maray – will offer Middle Eastern-inspired sandwiches, rotisserie chicken and sides.

The concept’s signature sandwich, which gives the kitchen its name, is a combination of aubergine, eggs, tahini, and amba, served in a soft, pillowy pitta.

Sabich’s rotisserie chicken is another menu staple; slowly cooked in its signature harissa butter marinade, and served in either a baguette with chicken shmaltz aioli, pickles and slaw, or as a quarter/half/whole chicken with a selection of sides including tahini, zhug, pickles, turmeric eggs, amba and pitta bread.

Sides at Sabich will include hummus, rotisserie-cooked baba ganoush, cauliflower bhajis and sweet potato wedges.

The new concept adds to the variety of kitchens at the market including Cuban-inspired Cahita, Italian Cucina Di Vincenzo, seafood specialist Kelp, Asian-inspired Ginger and steakhouse kitchen Bone and Block.

“Sabich is completely different to any of the other food vendors at the market and we pride ourselves on providing a really varied offering and Sabich further adds to that.
