Interesting Eating Company has opened the doors of a new pop-up café serving the brand’s signature coffee, pancakes and cakes in Liverpool ONE.
The new coffee shop has opened in the former HOME unit on Peter’s Lane, near to the Ted Baker and Harvey Nichols stores. It will remain open for two months, as the Allerton Road eatery aims to raise awareness of the independent brand in the city centre.
Nichola Lee, who is a director of the company along with Andrea Edwards, says: “We are thrilled to be expanding our business by opening the pop-up coffee shop in such a prime city centre location. We feel that Liverpool ONE is the perfect place to showcase our unique food and drink to customers such as families with children, students, business people and foodie lovers alike.”
The Interesting Eating Company is best known for its sweet pancakes and waffles, with American-style pancakes with bacon and maple syrup proving popular. It also offers sandwiches, cakes, light bites and gluten-free options.
