Pop-up restaurants planned for Speke’s New Mersey retail park

Speke’s New Mersey retail park could soon be home to a collection of pop-up restaurants and shops.

Plans have been submitted on behalf of owner Speke Unit Trust (SUT) to install a number of temporary units at two separate locations at the Speke Road site.

The first phase of the retail park’s planned £60 million refurbishment is almost underway which will include a new Cineworld cinema and six restaurants.

According to a planning document, the temporary pop-ups “will provide an opportunity for smaller operations and especially start-up operations to bring concepts and offers to the market with minimal capital compared with traditional property based options”.

The document adds: “The proposal represents a short term response to providing shoppers with additional complementary facilities while New Mersey undergoes the initial phase of its transformation.”

It’s not known at this stage what form the pop-ups will take, with a variety of different styles being proposed including the converted truck/caravan variety or more the permanent converted shipping containers, as seen at other retail parks in the UK.

If given the go-ahead, the first set of pop-ups will be located in the corner of the shopping park which is home to the likes of River Island, New Look and Sports Direct with the second smaller site proposed for outside Smyths Toys and Tessuti.
